
St Regis Abu Dhabi is celebrating polenta this month – Italian style.
At La Sagra della Polenta festival at Villa Toscana from January 20 to 30, Chef Stefano Viola has put together a set menu of dishes featuring cornmeal, a staple in farm-to-table cooking.
Choose from entrées such as sea bass fillet rolled with white polenta, charcoal-cooked tenderloin with soft polenta, wild quail stuffed with polenta and beef bacon and polenta gnocchi.
Appetisers include beef rolls with baked polenta and Tuscan farm honey, black truffle and cheese polenta bruschetta, polenta and parmesan over gratin, and polenta fritters.
